POTATO
SOUP Shared by Julie B.
in Virginia (Florida in the winter!).
4 or 5 potatoes (peeled, and sliced in small
pieces) 2 Celery stalks (I use the leaves cut up also) 2 Beef
or Chicken bouillon cubes 1 medium Onion (chopped) 1 stick of
margarine 2 cups of water 1 cup of milk (added later) Boil
potatoes, onions and celery in bouillon cubes until done, and some
of water has evaporated. I then add milk and margarine, reheat but
don't boil.....if not salty enough I either add another bouillon
cube or salt and pepper. If this is too thin I sometimes add a can
of cream of chicken soup,or instant mashed potato flakes. This
makes a great soup for cool days........I love soup. I don't add
meat to my soup unless it is chicken, then I add a small can of
chicken. Hugs from
Julie. |
