Holiday Mint Pie

1 cup Keebler grasshopper fudge mint cookies -- (16-18)
3 tablespoons hot water
6 ounces chocolate crumb pie crust
3 ounces cream cheese
1/3 cup sugar
2 tablespoons milk
1/4 teaspoon peppermint extract
8 ounces thawed Cool Whip
6 drops green food coloring -- (6 to 10)

Mix cookies and hot water. Spoon into crust and gently spread to cover bottom.

Beat cream cheese until smooth, gradually beat in sugar, milk, and extract.

Fold in whipped topping. Add food coloring.

Put dollops of mixture into crust. Smooth top with spatula.
